Breakfast or Dessert Vegan Parfait

This week I am back from a wonderful vacation visiting family and trying to get back into a normal daily routine. That includes making a healthy breakfast.
Weekday breakfasts as a vegan can be a little tricky. Most of the time I stick with oatmeal, peanut butter bagels or avocado toast. This week I wanted something a little different, and since I’m easing off of “vacation mentality,” I wanted something that was just a bit indulgent.
The vegan parfait is a great way to get a healthy dose of grains and fruits in the morning. As to not OD on sugar, I would suggest either buying an unsweetened yogurt, or, if you are like me and can’t stand that taste, get a raw granola or muesli that has no sweeteners added
Breakfast is also where I sneak in my chia seeds. Chia seeds, if you aren’t familiar, are a terrific source of Omega-3s. They aid in weight loss and help you to feel fuller. Also, and this is especially important with a sweet breakfast like this one, studies show that they slow down the absorption of sugars in your body, helping to control your blood sugar levels. Best of all, they have a neutral taste and can be hidden in your meal.
Breakfast or Dessert Vegan Parfait
1/2 cup non-dairy yogurt
1/2 cup granola or muesli
Handful blueberries
Handful strawberries
1/2 banana
1 tablespoon chia seeds
1 tsp cinnamon
If you are going for a pretty dessert, layer the ingredients, hiding your chia seeds between layers and topping with cinnamon. If it is a normal morning and you are struggling to get out the door for work or to get the kids to school, I vote screw the layers and throw everything in a bowl and stir. Tastes just as pretty.
